Happy Thanksgiving!

If you are looking for a delicious dessert that is a great alternative to the traditional fare of pumpkin pie during your holiday meal, and you love shortbread, almonds, sugar and butter- this is your dessert.

Let’s get started-

Almond Pie Bars


Pre-heat oven to 350 degrees

 Shortbread Base

1 cup (2 sticks) chilled butter

½ cup powdered sugar

2 ½ cups flour

Combine the above ingrediants in a bowl until the mixture resembles “coarse crumbs”. You can use a pastry blender or your hands. Pat into the bottom of a greased 9” x 13” pan. Bake for 10-15 minutes, or until the crust is lightly browned.


Almond Mixture

½ cup melted butter

2 cups sugar

4 eggs, beaten

½ tsp. almond extract

¼ cup corn syrup

2 Tbsp. flour

1 cup sliced almonds

Beat the above ingredients using an electric hand mixer or a stand mixer. Once combined, pour over the warm base and return to the oven for 30 minutes. I cover it with foil for the first 20 minutes and then remove to prevent over browning. It may need to go a few minutes longer to make sure that it sets in the middle. Keep an eye on it, because it can burn easily.

Once set, remove from the oven and let cool before serving. These bars should be kept refrigerated.
